Pumpkin Spice Pancakes for breakfast!

I came across this recipe for Pumpkin Spice Pancakes the other day while I was tracking my food online at the Weight Watchers website. I absolutely love anything to do with pumpkin so I just had to give these a try. I was really happy with the outcome. They were fluffy and moist with just the right amount of sweetness. Mark liked them fine but said they won’t ever replace the buttermilk blueberry pancakes that I make.

I was almost going to double the recipe just so I had enough leftovers. But I followed the recipe with each pancake using  a 1/4 cup of the batter and ended up with 16 nice sized pancakes. So it did make a nice amount and now I have enough leftover for breakfast for the next three days. The next time I make these I might add a little ground ginger to the batter to spice it up a little. I will for sure double the batch so I can freeze a bunch to have on hand.

    Whaaaat? You made Pumpkin Pancakes and didn’t call me?? Those look crazy good! They are one of my favorite pumpkin things and as I am writing this I am actually considering making a batch for dinner! Or, I could just come over to your place cuz it looks like you have plenty left ; )

      Ha just try to come get my pancakes. I still have them I ate oatmeal this morning instead of the pancakes. I guess I know what I will be having for breakfast tomorrow.
